Metropol Restaurant was founded in Santurce, in 1965, by Jose (Pepe) Canosa, a
Cuban immigrant, who had moved to the island a year before. His concept of good
service at good prices, familiar ambiance, and excellent creole and international
food, was an "instant hit", winning the favour of the public, and leading him to
open new establishments throughout the metropolitan area.
