It has been 27 years since a hillbilly from Adjuntas with a low budget of 150
dollars opened the doors of La Fonda del Jibarito at 276 Sol STreet in the Old San
Juan. At the beginning it was difficult for the restaurant, everything was made in
rough style by hand and its location was in an area that was not
commercialized.
